Anyone who has known me for any length of time knows that I love to bake. Some of my earliest memories are of baking in the kitchen with my mum and nana, and since having my own children, it is something that I love to share with them too. Whether that’s baking together, or whipping something by myself up for them to enjoy. Recently Natural Delights got in touch to see if I would like to collaborate with them on a YouTube video and create one of our favourite sweet treats, with a twist. Of course, I said yes, and had a great time following a recipe from the Natural Delights website.
My children can be very selective with which foods they like to eat, so when I saw the ingredients list I have to admit I was sceptical. Could a recipe with so much goodness in it, really create an amazing brownie that my children would enjoy?! Well you will have to watch the video to see their reaction when they tried them!
If I handed my children a date, there is a 99% chance that they would decide not to try it. But these brownies were a hit and I have to be honest, I felt super smug watching them unknowingly devour all that good nutrition.

- 3/4 cup of packed Natural Delights Pitted Medjool Dates, ~10 medium dates
- 1/4 cup water
- 1/2 cup of almond butter
- 1 1/2 tablespoons of Organic Ground Linseed/Flaxseed meal
- 1/3 cup of cacao powder
- 1/2 teaspoon of baking soda
- 1 1/2 teaspoons of vanilla
- 1/2 tablespoon of apple cider vinegar
- 1/2 teaspoon of salt
- Optional: 1/2 cup of dark chocolate chips + more for topping
1. Preheat the oven to 350 degrees F and line an 8×8 inch pan with parchment paper.
2. In a food processor, blend together the dates, almond butter and water until the dates are almost fully broken down and a paste forms. You may need to stop and scrap the sides of the food processor a few times. This will take about a minute of blending.
3. Add in the remaining ingredients (minus the chocolate chips) and blend until fully combined. Fold in the chocolate chips.
4. Pour the batter (it’ll be pretty thick) into the prepared pan and use a spatula to spread it out evenly into the pan. Top with additional chocolate chips as desired.
5. Bake for 22-25 minutes or until a toothpick inserted in the middle comes out clean. Serve and enjoy!
