Over the last few years, I’ve slipped into the bad habit of skipping breakfast. Our mornings before school can be so hectic and with so many things to remember for the children, I often forget to eat until much later on – when I suddenly realise I’m ravenous! But this year I am determined to get back into the habit of eating breakfast. It’s one of my New Years goals, and so far I am doing pretty well. Our mornings are still chaos, and I know that’s unlikely to change, so I’m finding ways to make breakfast an easy, manageable part of my routine. One of the best ways I’ve found to do this, is to prepare things which I can grab and eat on the go. I’ve been trying out various recipes, finding things which we all like, and I’m going to share one of my favourites with you now.
Date, Oat & Peanut Butter Breakast Cookies
3 bananas
200g rolled organic jumbo oats
100g peanut butter
50g honey
1 tsp sweet cinnamon powder
10 Natural Delights dates
You could also add nuts
First chop, or blend the dates. Then mash the banana until it is smooth, then add the remaining ingredients, stirring in the dates at the end.
Create the cookie shapes by rolling the mixture into balls and then squashing down so they are 1-2cm thick. Bake at 180°C/360°F for 15 minutes. Wait for them to cool, and enjoy!

I love how simple this recipe is, and you can freeze the cookies too. I try to make a big batch every so often and freeze some of them, so that I always have something quick, easy and nutritious to grab and eat on the go. Both the kids will eat these too, but Ernie especially loves having them as a snack after school.
Since I made date brownies last year, which were such a success, I have been making a conscious effort to include dates in our diet as often as I can. They have so many amazing health benefits, and they also add so much natural sweetness to any recipe – great for anyone else with a sweet tooth! In the last few years, I’ve moved away from making grand, impossible to achieve, New Years Resolutions. Instead I try to take small, manageable steps to improve my habits, and my life, which is exactly what I am doing by making these breakfast cookies and improving my mornings. As they say – breakfast is the most important meal of the day!
